The Ultimate Summer Birthday Cake

On Friday I celebrated my 22nd birthday! I cant believe how quick it came around, my 21st doesn’t even feel that long ago! (you can read about my 21st birthday here) I had a little girlie afternoon tea at my parents house enjoying the UK heatwave.  As I was off work the day before I made myself a birthday cake! I LOVED how it turned out, it looked so summery and tasted incredible. Here is the recipe:

Ingredients for the sponge:

10oz Caster Sugar

10oz Self Raising Flour

10oz Margarine

5 Medium Eggs

1 Teaspoon of baking Powder

Ingredients for the filling/decoration 

1 Jar Strawberry Jam

600g Icing Sugar

300g Butter 

3 Packets White Chocolate Fingers

1 Large Strawberry Box

Red ribbon


  1. Mix the sugar and margarine together until it is a creamy consistency 
  2. Add the eggs in one at a time 
  3. Gradually add in the flour and baking powder
  4. Once it has all mixed well, add the mixture to one circle cake tin
  5. Bake for 30 mins at 180 degrees – poke a knife in the middle after 30 mins and see if it has baked the whole way through
  6. Leave to cool
  7. Once cooled get the filling ready. Mix the Icing Sugar and butter together until it is all smooth
  8. Cut the cake evenly in half
  9. Spread the buttercream 95% on one side of the cake then add the jam on top 
  10. Add the other half of the sponge on top
  11. Using the leftover butter cream stick the chocolate fingers all around the edge of the cake and tie the ribbon to keep it together
  12. Add the strawberries to the top
  13. Enjoy 🙂
