Christmas Baking: Snowmen Cupcakes

Last week I was aimlessly scrolling through pintrest looking for some Christmas Inspiration when I stumbled across a photo of Snowmen cupcakes, they looked so cute and this weekend I decided to set myself a challenge and try to make them… it was much easier than I expected, so I thought I’d share how I did it!

I recently got ‘The Hummingbird Bakery’ cookbook for my birthday so I tested our their chocolate cupcake recipe…

Recipe & Instructions:

Ingredients

For the Cake:

  • 100g Plain Flour
  •  20g Cocoa Powder
  • 140g Caster Sugar
  • 1 1/2 Teaspoons Baking Powder
  • A Pint of Salt
  • 40g Unsalted Butter (at room temperature)
  • 120ml Whole Milk 
  • 1 Egg
  • 1/4 Teaspoon Vanilla Extract 
  • 12 Cupcake Cases

For the Icing & Decorating:

  • 300g Icing Sugar
  •  50g  Unsalted Butter (at room temperature)  
  • 125g Cream Cheese
  • Black Colouring
  • Red Colouring
  • Marshmallows
  • Orange Ready Roll Icing 

Baking the cupcakes:

  • Preheat the oven to 170°C
  • In a bowl put the flour, cocoa powder, sugar, baking powder, salt and butter and beat until you get a sandy mixture and everything is combined. You can mix using a hand held mixer or freestanding mixer
  • In a separate bowl mix together the egg, milk and vanilla extract 
  • Slowly pour half the liquid into the mixture, beat together, then turn up the mixer to high speed to get rid of any lumps
  • Turn the speed down and pour in the remaining mixture
  • Continue mixing for a few more minutes until the mixture is smooth, be careful not to over mix otherwise the cupcakes will not be light and moist
  • Spoon the mixture into your 12 cupcake cases until two-thirds full and bake in the pre-heated oven for 20-25 minutes, so that when you insert a skewer, it comes out clean.
  • Leave to cool before decorating!

Decorating:

  • Mix the Icing sugar and butter together until well mixed
  • Add the cream cheese in one go and keep mixing until it has all mixed together well
  • Be carful not over beat, as this will make the icing too runny
  • Once the icing is ready set up 3 piping bags, 2 with very small holes and the 3rd with a larger pipe hole
  • Put half the icing straight into the pipe bag with the large pipe hole and roughly ice the cupcakes, use a small spoon if needed to spread out evenly
  • Then split the remaining icing into 2 small bowls, using the colouring make one bowl black icing and the other red and then place both into the icing bags with the two small hole pipes
  • Using the black icing, make small dots on the marshmallows for eyes and a smile
  • Using you fingers use shape a small amount of the ready roll orange icing to create the nose (you may need a dab of icing to make it stick to the marshmallow)
  • Place the snowman’s marshmallow head onto the cupcake 
  • Using the black pipe bag, pipe some thin stick arms and hands
  • Finally finish the snowman off by giving him some buttons with the red icing!
